I am pretty sure this is not diet friendly.
Tons of butter and lots of cheese.
Regardless this leaves me salivating as I type the recipe for you.
I found this recipe off of Pinterest last year sometime.
Finally decided to make it. Sheese. We all know how that goes right...
Pin Pin Pin...never do do do.
This Christmas we wanted something other then the traditional Turkey or Ham dinner.
It was just the husband, kids and I, Christmas Day so we wanted to change it up.
This recipe taste just like Broccoli Cheddar Soup from Quiznos. TRUE STORY.
So if you are salivating now...I guess I can share the recipe that I used.
Broccoli Cheddar Chicken Casserole
(I gave the recipe a new name)
Dish Ingredients:
1 – lb. fresh broccoli cut in pieces, and steamed for 2 minutes to add tenderness.
3 cups cooked chicken breasts – cut in small pieces
3 cups Grated Cheddar
2 tubes Ritz Crackers-crushed
1 stick melted butter
1 tablespoon poppy seeds

Sauce Ingredients:
1/3 cup Butter- melted
1/4 cups Cornstarch, dissolved in 1/2 cup COLD Water
1/3 cup Chicken Broth
1/4 tsp. Salt
1/4 tsp Pepper
2 Cups Milk
1 1/2 cups of the above Cheddar Cheese
1/3 cup Butter- melted
1/4 cups Cornstarch, dissolved in 1/2 cup COLD Water
1/3 cup Chicken Broth
1/4 tsp. Salt
1/4 tsp Pepper
2 Cups Milk
1 1/2 cups of the above Cheddar Cheese
Directions:
In greased 13×9 pan, layer the broccoli and chicken. In saucepan over medium heat, combine the melted butter, cornstarch mixture, chicken broth, seasonings, and milk. Stir well, and continue stirring until sauce has thickened (just like gravy). Turn heat down to low, and add 1- 1/2 cups grated cheddar cheese. Keep stirring until melted. Pour cheesy sauce mixture over the chicken and broccoli in casserole dish. Add remaining 1- 1/2 cups grated cheddar cheese.In another bowl, melt the 1/3 cup butter adding the poppy seeds, and stir well. Crush Ritz crackers in large zip-lock bag with a rolling pin (about crouton size). Add crumbs to the poppy seed butter mixture, mix well. Evenly layer crumbs over the top of the grated cheese.
Bake uncovered at 350 degrees for about 30 minutes. Allow casserole to sit for about 5-10 minutes.
Serve and enjoy!
*My tip: Serve over rice or garnish with bacon bits...yum!*
I also made homemade applesauce.
